Methyl Cellulose (MC)

Functionality:
Forms unique firm, reversible gels upon heating (Gel Temp ≈ 50°C), and provides texture, water control, oil barrier, emulsification, adhesion & viscosity. Viscosity range 15 -100,000 cps
Product Application:
Vegan meat alternatives, bakery, pie fillings, formed food products, fat emulsions, meat products, potato-based products, batters and breadings, petfoods.
Properties:
Gel Temp: 50°C
Viscosity: 15-100k

Hydroxypropyl Methyl Cellulose (HPMC)

Functionality:
Forms soft to semi-firm reversible gels (Gel Temps:≈ 60°C, 65°C, 75°C). Provides texture, moisture control, oil barrier, increased yield, film forming, whipping, foam stability, emulsification, crumb structure, adhesion & viscosity. Viscosity range 100 - 100,000 cps
Product Application:
Gluten-free bakery, stabilised sauces, edible films, vegan foods, whipping creams, dairy, pie fillings, formed potato products, batter & breadings, fried products.

Gel Temp: 60°C - 75°C
Reversible

Cellulose Gum (CMC)

Functionality:
Thickening, water binding, suspending aid, film forming, colourless solutions, pH stable, synergistic with Carrageenan. Viscosity range 20 - 100,000 cps
Product Application:
Juice & milk drinks, yoghurts, ice cream, frozen desserts, noodles, tortilla, bakery products, meat & poultry, soups & sauces.

Cold Soluble

Locust Bean Gum (LBG)

Functionality:
Thickening and stabilising, water binding, synergistic with carrageenan to increase gel strength.
Product Application:
Sauces, desserts, dairy products, confectionery, bakery, meat products, petfoods.

Functionality:
